Liquorice, really! I was enjoying a relaxing cup of liquorice tea just the other day when I thought maybe I could use it to bake something. Liquorice tea is made from dried liquorice root and it actually tastes amazingly sweet and not anything like a liquorice allsort.
Banana bread is so classic and tasty and warm, why not mix it up next time with a cup of liquorice inside! I promise it won’t be overwhelming or weird, its a very subtle.
Recipe based on this one from What Should I eat for Breakfast.
4 mashed bananas
100 grams melted butter
1 cup brewed liquorice tea (or another tea/ milk/ buttermilk/ water)
1/3 cup honey
1 tsp baking soda
pinch of salt
2 cups flour ( half buckwheat and half wholemeal spelt – or all of either)
fennel seeds to sprinkle on top (optional)
Preheat oven to 175C, line a bread tin with baking paper.
Mix the wet ingredients first, then add the rest and mix until just incorporated fully.
Pour into tin and bake for 1 hour, check with a knife that its cooked through.
Serve with butter and honey, would also be delicious with yoghurt or ricotta!
